Ingredients:
Red Chilli - 1 Cup
Dhaniya Seeds - 3/4 Cup
Dalchini - two 3 in. sticks
Kadlebele (Chana Dal) - handful
Urad Dal (Uddina bele) - handful
Jeera, mustard, khus khus, pepper, methi seeds - each 1 big spoon
Method of Preparation:
Dry roast all of the above in a kadai, till a strong aroma arises.
I also make some changes in making this masala according to what sambar im preparing. For Idli Sambar, I roast all the above. For general, everyday "one-vegetable" sambar, I skip Dalchini, Pepper and Khus Khus.
after roasting, let it cool completely. Then grind it finely using a coffee grinder. Sambar Powder ready.
